Snow day! One of my biggest grouches about living in London is that you never get to see a proper winter. It just feels like grey sky, grey streets, grey buildings, even the trees look grey. I miss the big, bright winter skies, the glittering frost and the way the snow reflects light… Last night I took the Pet Finn for a walk to frolic in the snow and then to warm up with a pint (cider for me obvs) next to the roaring fire in the Highgate Inn.
And what is better on a cold day than a slice of cake and a hot drink? Especially after pelting eachother with snowballs… This cake is embarrassingly easy to make and the hint of spice makes it perfect for this chilly weather!
120g gluten free self raising flour
30g raw cacao
100g golden granulated sugar
100g unsweetened soy yogurt
100g non-dairy butter substitute that is suitable for baking (softened)
2 ripe bananas, mashed
1/2 tsp baking powder
1 tsp ground cardamom
1 tsp ground cinnamon
1/2 tsp vanilla powder
50g dairy free dark chocolate, chopped
Preheat oven to gas 4.5 / 185 C
Line an 8″ / 20cm baking tin with greaseproof paper
Put all the ingredients in a bowl and gently whisk together until it is all thoroughly combined.
Put in your preheated oven and cook for 30-35mins, once it’s done it will pass the skewer test, just be careful you don’t mistake the melted chocolate for uncooked cake!
Leave to rest for about 10 mins before you attack it, enjoy warm with the chocolate melted, although I promise it’s still seriously good once it has cooled down!
Yes it really is that bombproof! Just make sure that your bananas are well mashed and your fat is softened so that it will mix in easily, if you’re using something like Pure then it is good to go as is! If you’re not a huge dark chocolate fan then either reduce the amount or opt for one of the mylk chocolates that you can get, Ombar does a great one, so you don’t miss out on the melted chocolate fun!
It has been a couple of weeks with no posts because I was a bit bogged down and distracted with hunting for a new job now my leg is back up and literally running. And really happy to say I’ve found something great! Excited to get started next week… so back to restaurant life with a change of scenes!
